The most crucial step in producing A2 Sahiwal Cow Ghee is acquiring and raising purebred Sahiwal cows and feeding them using traditional methods such as grazing, whole seeds, and quality fodder.
The next step is to obtain healthy A2 Sahiwal cow milk and boil it over dung cakes made with cow dung and firewood. This is a lengthy boiling process that offers two benefits. First, it disinfects the milk and makes it completely safe to consume. Second, it increases the concentration of A2 milk.
The lukewarm milk is then poured into an earthen pot after boiling the same, to make the perfect curd. You can feel the lukewarm milk, and it's the best time to add a curd starter called “jamavan”. Add a full teaspoon of curd starter to the lukewarm milk and stir the milk with that spoon.
A bi-directional wooden churner, called "Bilona/Valona," is used to churn the curd to obtain fermented makkhan (butter). This is one of the most important steps in the entire process. It is a lengthy process that culminates in the separation of curd into butter and buttermilk.
After churning, the butter and buttermilk separate, resulting in creamy butter floating on top. The butter is then carefully extracted and separated from the buttermilk, each stored in its dedicated container.
The makkhan is melted at a medium temperature by heating it over dung cake and firewood in a container. As it boils, a solid layer becomes visible, indicating that A2 Ghee is almost ready. At this point, the real aroma of organic cow ghee can be smelled as it turns yellow-golden. Finally, this golden liquid is filtered through a strainer and stored in glass jars.
